Come and meet Jason Moore with over 30 years' experience in the butchery and meat trade. Learn where all the different cuts of meat come from and how to cook them. The day is part demo and part hands-on. Jason will show you where all the main cuts come from on a lamb. A chef will be on hand to add information on cooking techniques. You will then prepare a boned stuffed chicken with ricotta, herbs and sundried tomatoes to take home to cook. Lunch will be rack of lamb with mustard and herb crust which you will have prepared. A belly of pork will have been cooking slowly somewhere in the cookery school which will be tasted at the end.
